Spanish for meatballs and served either in a broth, dry, or (as in this case) with a sauce, albondigas hold a special place in the hearts of many Mexicans. Chipotle chiles are dried jalapeños and give the dish a classic smoky flavor. The sweetness of golden raisins balances beautifully with the acid, spice and salt in the sauce.
